Gorgonzola Summer Salad

It's almost back to school for our kiddos. I can't even believe it's come so quickly! Our school in Virginia actually starts in September, so this is a tad early for us.

The girls have new family orientation today at their elementary school and they are so excited. They can't wait to tour their new school and classrooms.

Since we moved, we've been trying to eat pretty healthy. For us, we love salads with loads of summer veggies!

Gorgonzola Summer Salad 

Dressing
2 TB EVOO
1 TB Balsamic
1 TB Maple Syrup
Fresh Pepper and Salt to a stainless steel mixing bowl.
Mix dressing and let rest on bottom.

Salad
Add in sturdy veggies like tomatoes, mushrooms, carrots, first and then lettuce and gorgonzola cheese (awesome). The key is to not mix until you are ready to serve! I make our salads ahead of time and then toss at the time of serving and it stays fresh!

Brandon has more photos, but we had a great time with Nana and Poppa Shmidt when they visited this weekend. We toured the falls where Brandon proposed to me. 

Jess and I ran the trails around our house on Saturday and had a blast getting lost! It felt awesome to run with her again

I actually timed my run today and I was running in the 8:50s and 9! I haven't timed myself since we moved. I will say moving took up a lot of mental head space. Running without worrying about packing, contractors or deadlines is so much easier! So if you are in a crazy place and your times are slipping it def. contributes to slower paces. 

Have you seen the Chick Fil A video? It's so stinkin cute and reminded me of our fun trip to Chick Fil A when we dressed like cows this summer. And I miss that blue door.
