The girls have new family orientation today at their elementary school and they are so excited. They can't wait to tour their new school and classrooms.
Since we moved, we've been trying to eat pretty healthy. For us, we love salads with loads of summer veggies!
Gorgonzola Summer Salad
2 TB EVOO
1 TB Balsamic
1 TB Maple Syrup
Fresh Pepper and Salt to a stainless steel mixing bowl.
Mix dressing and let rest on bottom.
Add in sturdy veggies like tomatoes, mushrooms, carrots, first and then lettuce and gorgonzola cheese (awesome). The key is to not mix until you are ready to serve! I make our salads ahead of time and then toss at the time of serving and it stays fresh!
